200g orzo 450ml vegetable stock 100g baby leaf spinach 250g wild or chestnut mushrooms, sliced3 tbsp olive oil 2 garlic cloves, finely gratedSea salt flakes, to taste50g blanched hazelnuts 25g salted butter Small bunch sage (about 10-12 decent sized leaves)40g parmesan, finely gratedZest and juice of 1 lemon
