Traditionally, rose is a foundational, highly symbolic flavoring in Persian and Indian cuisines, in which “the flower itself is revered,” says Meherwan Irani, owner of the spice company Spicewalla and the Chai Pani Restaurant Group. Its long culinary history stretches back at least to fifth century Rome, when a cookbook by Apicius included a recipe for a rose pie made with calf’s brains.
